Telephone interface

I'm not sure how much data is sent to control the radio itself and how much is used for audio transfer.

I can't get high speed internet at my remote site but I can get telephone lines. Would it be feasible to go old school with a  56KB modem for control and a second phone line to carry the audio?

No, that won't be good enough, sorry.

Look at other options, such as 4G (make sure it has a public IP address) or a point-to-point WiFi connection.
