We want to use the remote rig to control a radio inside a large building using their existing CAT 5 cabling but NOT their network switches. Do we still need to configure IP addresses?

Only if you will be hooking them up to the network in that building. If connected directly to
each other, then there is no need to do anything.

What Mitch says is that you do not need to change the ip config from the default, but ip adresses must always be configured and matching
